Trim and freeze them...they freeze fairy well....use zip-lock bags and suck the air out of them once you've filled a bag up...they'll last for months, and defrost fairly well....or use them frozen in smoothies....or make a puree out of them....mmmmmm. Sugar - or any kind of honey or flavored syrups - are good options to bag them with...
I freeze them on sheet pans first - then seal them in vacuum bags once they are frozen.

I have a few strawberry plants around the garden - feed the mice, birds, slugs, snails, etc - I rarely get to eat any - am envious of your crop (I buy my eaters locally)
I built a wire cage over my strawberry bed to keep the critters out...
