The wild Chicory is just going over in the hedgerows now. It is a beautiful sky blue, though sometimes tinted with pink and it looks spectacular where it grows on top of the chalk downs, under a blue sky. But sadly, when I tried growing it in the garden it was just far too invasive, though for just one year, until rooted out, it was the most commented on flower in the borders, everyone loved it.

I love to see the chickory growing wild at the edges of roads. It has such a lovely color. It is a relative of lettuce, btw.

Dig up the roots. Clean them. Dry them. Roast them. Grind them. Add to your ground coffee for a real French coffee feel.

It is a lovely colour. It grows by the roadsides in Spain and wild in the garden too. I haven't heard of a cultivated version

Yet I wonder if the vegetable flowers, and if so is it as invasive ?

Such a delicate, feathery blossom - I've never seen it before!

Usually the flowers are about two inches across but they can get to three or more. I have not yet found out if there are cultivated types that can be grown for flowers, although there are obviously one which can be grown for eating.
