Last nights dinner and today’s lunch. Nicely seasoned peppers and squash over red quinoa. I love eating well while not killing anything that has a mother or a face☯️

Quinoa is a great substitute for those of us with a gluten intolerance. Squashes grow well here but not enough people appreciate them. A large butternut squash when stuffed is a good replacement for a turkey for Thanksgiving.

Onions, garlic, yellow squash and a yellow bell pepper stir fried in coconut oil.. I used Himalayan pink salt, black pepper and Tumerick... red pepper flakes on the plate. I use Tumerick in almost everything with black pepper, natural Anti-inflammatory☯️

@ArdentAtheist yeah, sounds delish! I use turmeric but not in everything. Cumin has to be my favorite spice, also cayenne, chili powder and others. On the WFPB diet they don't want you using any oils. Coconut and olive have been what I have used. They tell you to use veggie broth, but it isn't quite the same. I also use the Himalayan pink salt, and am constantly kidded about it when with family. Lol, what we put up with to follow our convictions. I just smile, laugh along, cause I'm the one that is healthier than all them. ?
Sometimes they will try what I make and like it, but don't try to take away their meat. Smh.

I forgot to mention an ingredient, imitation pork, basically seasoned tofuu.. forgot it was there till I added chunks of tofu and vegetarian hoisin sauce to make tonight’s dinner. I think that might be the carrot looking bit? 🙂
