One pillow is fine.

1 pillow is good for me. I can't get comfortable with more than 1 pillow. It hurts my neck and closes off my airways a bit. I know people who love using 2 or more pillows. I don't get it.

Two, both under my head. If I am in some other bed, one pillow will work if I double it up.

I sleep with 4 pillows, and if I had more room on my bed, I would add more. I don't think there is such a thing as "too many pillows." What's more, I like having two Amazon body pillows on each side to feel like someone is sleeping with me and I can cuddle them at night. They are so comfortable and support you no matter what side you sleep on, and the best part is that they have such great material and keep you warm even on summer nights, which is great.
