Deadwood, hands down. On non-subscription tv, Justified. Looking back in time, Mork and Mindy as a comedy, the Rockford Files. Plenty of other shows I loved, and it was hard to leave them out, but I put too many in this list as it stands.

It is impossible to say "ever". Depends on the time, my stage of evolution (I once love star trek the next generation but now hate it) and if I am sharing it with another (we both loved From Larkrise to Candleford - [en.wikipedia.org]. I now prefer British series (Like Endeaver and I loved "The Crown" ) but right now I am watching "The Good Wife" and it has become a present favorite.
