It's a simple recipe...I posted it below. Be brave and give it a try.
Looking forward to having some in August, maybe if the winds don't pound them to the ground.
P.S. Global Warming sucks the wind just doesn't stop around here anymore.
Recipe?
That's easy
1 3/4 cups all-purpose flour or whole wheat pastry flour
1 teaspoon cinnamon (or nutmeg or all spice or even pumpkin pie spice)
3/4 teaspoon salt
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup organic raw sugar
---mix dry ingredients in bowl
then add:
one ripe banana blended into a "paste"
1/3 cup melted coconut oil
1/4 cup coconut mylk coffee creamer vanilla flavored (or vanilla almond mylk or any plant-based vanilla mylk)
1 teaspoon vanilla extract
mix by hand until pretty evenly distributed....but will start to get dry so add in 1 1/4 Cup grated fresh zucchini
and then throw in a handful of -- raisins, dried cranberries, dried blueberries, or dried cherries
and then throw in a handful of your favorite tree nut
into loaf pan and bake about 55 mins at 350 F or until a butter knife pulls out clean
adjust baking time down for cake pans where the batter is spread more thinly or muffins
