Its still hard for me not to say God Bless you, when someone sneezes, what do you say, if anything at all? And do you know why that all got started, if not i do.

Yes, I do know why, as the plague years are well recorded. I say bless you, but not god bless you, as i am handing out my own blessings, which are limited, so i warn people that i only dole out two at a time. Upon the third sneeze they are on their own.

When I belch I may say “Good beer.”

I was told once by a Doctor, that when we sneeze our heart stops, thats why people say God Bless You

Since most folks don't know that, that isn't why. The practice dates from the time of the bubonic plague, one of the earliest symptoms of which was sneezing.

"Cover your fucking mouth" is my usual response, or I ignore them. We don't bless coughing, belching, or farting. What makes the sneeze so special? I would really like to know.

back in the day they thought that sneezing was the soul leaving the body. and it was assumed that the soul would only return to a "sinless vessel" so they would bless your body.

I say gesundheit.

I say nothing when someone sneezes, though I might give them a dirty look. I don't say anything, either, when someone coughs, hiccups, belches, or farts.
