What are your top 2 go-to meals during the work week? Please no fast food. I make Spaghetti pie, and Cauliflower gratin. They're not necessarily fast to make, but the leftovers are off the chain. I can kill almost a whole week off just these two.

Dude! Spaghetti Pie is effing awesome! When I make anything it all depends what's in the cabinet, fridge or freezer and that usually depends on sales at the grocery store. Also depends on what type of diet I'm on. Currently very lo-carb so nothing starchy. I get my creative on.

Portabello mushroom caps stuffed with a mixture of spinach and black rice (called "forbidden rice" - or use brown rice) topped with parmesan & cheddar cheese. Good as an appetiser or main course.

I eat the same thing every day..a can of one-serving Thai hot, spicy sardines with a cup of cho-wa tea for early breakfast.
No lunch.
Dinner is a boiled free range egg, freshly made cashew butter/mung bean sprout mash. I usually drink a cup of freshly juiced greens and carrots with hot Thai pepper.
Sometimes I eat a few raw almonds, or dried dates.

I eat whatever makes me feel good, and keeps my health improving. I drop any food that congests me or takes my energy.
I would eat more foods, but if it's not making me feel better, it's not worth it.

I eat bean & rice bowls most days. Oven fries & homemade tortilla chips are a couple favorites, too. 40 pounds down so far, & I'm not starving myself at all.
