I'd really like to see where this is addressed in the bible, they don't even try to justify their behavior, just say that whatever hateful prejudice is "against my religion"

On strictly pedagogical grounds the teacher should call the student by whatever name or pronoun the student prefers. It makes no sense to get into a squabble about that. The teacher who does is an idiot.

Just exactly what scripture or other part of her beliefs has bearing on how she addresses her students. (In other words, her excuse is a bullshit lie.)
