Pinto beans and jalapeno from our garden with corn bread.

That might be cheap, but sounds too good to be a struggle meal. Yum!

2

Fried potatoe sandwich

2

Bologna from the Dollar Tree.

Ew! Lord only knows what it's made of.

@vita low self esteem and shame I think, and of course lips and assholes.

When I was young and very stupid, I was in college and married an unemployed graduate student. We practically lived on what we called "White Trash Casserole," the boxed mac and cheese that was so cheap, it was pink, a bag of frozen mixed vegetables, and a can of tuna. When I left him, I swore I'd never eat that shit again. Haven't eaten that crap since the mid 1990's.

There are a lot of "white trash casseroles" I swore I'd never eat again. As a child I hated it. Yet yesterday I ate ham and potato struggle casserole. Sigh.

@LadyAlyxandrea At least ham and potatoes are actual foods, though. I shudder every time I think about pink mac and cheese.

I have a recipe for "White Trash Casserole" (I named it that) in my handwritten recipe book. Grease a casserole dish. Add a layer of mashed potatoes (probably prepared from instant mix), a layer of green beans (probably from a can), and a layer of cooked crumbled hamburger (whichever type was cheapest). Bake for, I don't know, until it looks done-ish. If you really want to fancy it up, add a layer of shredded cheddar about five minutes before done-ish.

@vita My grandmother called that "Chinese Pie."

Ramen, Kraft dinner or hot dogs.

2

Struggle food: food made for very cheap, for extremely impoverished people.

Shit on a shingle, beanie weenies, garlic bread made with actual bread and garlic powder, goulash, hotdog boats

3

When I was in school there was a little Chinese take-out place where you could get two yummy pork buns and a bowl of wonton soup for under $5. That.

2

Mix can of stew, refrained beans, cream corn, diced tomatoes and optional canned meat together over flame. Eat for a week.

3

I had to look that up.

My student days were fueled by corned beef and instant mash. All mixed together to make a delicious pink gunk.

struggle meal: A cheap meal/snack bought at the store usually eaten by broke college students. Examples include ramen, chips and dip, and microwaveable meals. (Thanks, Urban Dictionary.)

nachos with salsa and cheese

Not sure what a struggle meal is. When you're having a bad day what do u make? Struggling financially?

Cheap financially struggling meal. Shit on a shingle, ramen, garlic bread on actual bread with garlic powder, beanie weenies, hotdog boats lol

Not exactly a thing here, I love a bit far from super convenience, we have a rule in teh house, we must make the food ourselves, preferable home grown or caught, but that rule is broken a lot. Can't even think of a struggle meal to be honest.

For me it's mashed potato boats, or shit on a shingle

5

Cheesecake makes all struggles seem more manageable ?

True but I'm talking cheap meals for Super poor people.

I was just eating shit on a shingle and thought to ask this lol

@LadyAlyxandrea Ahhhh.... Those struggles! I haven’t had those in years! Now I am craving them.

Lasagna... right out of the oven. Dripping with cheese and sauce... its like honey to a bear. That and a salad with Italian dressing. Maybe some garlic bread if its available... i struggle with over doing it.

If your meaning a bad taste in my mouth... then eating at my brother in laws house. We visited for a few days. When we got there... he had made spaghetti... the sauce taste like tomato paste.
