A lot are mentioning Clapton but none mentioning JJ Cale.

Me, but I can't play anymore. Just kidding. There have been many in all genres, but the ones who come immediately to mind are Clapton, Hendrix, Van Halen, B.B. King, Zappa, and Hooker. There are many more.

There are so many talented people out there. I can't possibly have a favorite. I will however recommend looking up Justin Johnson playing the e string shovel. I would post a YouTube link but my stupidphone outsmarted me every time.
