Kate and I have been married for coming on our thirtieth year. She has made her famous potato salad three times so far and she says she will make it again if I live long enough. We are having a good time hope everyone else is also. Just wanted to put it into writing in case I need to refer to something. Pictures later after it is made.
Kate is now telling me this is not as it should have been, she will try to get it better next time. I told he I am not waiting another ten years. I made it a challenge.

3 times in thirty years? That must be the best taste ever. No doubt, there must be many other non-potato dishes she has prepared to your satisfaction for you to endure all the rest of her to wait for the next potato presentation.
I have a similar situation. My wife of 51 years, Lesley, makes a fantastic pork, pineapple, potato, butter, and ginger ale casserole dish as far as I can remember!
Maybe, possibly, and perhaps she will refresh my recollection of it before I too expire.

I’ve been making potato salad for almost 50 years and mix it up sometimes adding different things. My family’s favourite is when I add kidney beans and use scallions instead of onions...it also looks less anaemia by adding some colour! Btw...congrats on staying the course together...nice to hear a good news story.
