What are your top 2 go-to meals during the work week? Please no fast food. I make Spaghetti pie, and Cauliflower gratin. They're not necessarily fast to make, but the leftovers are off the chain. I can kill almost a whole week off just these two.

I am incapable of eating the same things over and over again. It is actually more likely to make me eat crappy food. My go to is pork chops and angel hair pasta

Potaje de garbanzos ("garbanzo potage" ): a Spanish stew of potatoes and garbanzos in tomato sauce. Hearty, comfy, vegan, proteinaceous, one-pot meal. Not terribly difficult to make.

"Turkish beans": beans and onions in a tomato sauce, similar to chili. I made it with huge "Mayan sweet" onions and it was incredible! Also vegan, proteinaceous, and not difficult.

Since I started living alone about 6 months ago I find myself just eating cheese and crackers or something similar for supper so I’m going to change your question to lunch for me (I work but bring my lunch every day).

If I don’t have leftovers from the weekend then usually a cheese quesadilla, an avocado and crackers or an egg and cheese tortilla.

I tend not to eat during working hours. Unless biscuits count!

Cheese and chutney, cheese and tomato, cheese and marmite? - Can't be just cheese, too dry.

@CeliaVL Cheese and chutney for preference, cheese and pickled onions if I haven't got chutney, don't tend to do cheese and marmite because marmite is about the only food except cheese I like so I prefer to keep it as an alternative to prevent me starving to death if I ever go off cheese (unlikely, but better safe than sorry), cheese and brown sauce if I'm slumming it 🙂

@Jnei And if you want to claim you are eating healthily, cheese and lettuce, cheese and cucumber. My husband likes crumbly Cheshire cheese with jam, but then he's from Crewe.

@CeliaVL Cheese with jam? A new one on me... I like that Cheshire cheese with blueberries or cranberries in it, though, so I can see how this might work quite well.

I'm home from work by 11am most days so I cook regular meals.

I have the luxury of teaching cookery to young people, so get to sample the morning's efforts for lunch at school.

Evenings are generally fairly simple affairs - a quick stir fry or salmon en papillote with steamed veg or grains. Sounds complex, but is a really simple healthy dish. Coat salmon steak in ginger and garlic paste, wrap in baking parchment and put into steamer with veg of choice (cauli/broccolli or whatever). Go for shower change out of work clothes. Serve with sweet chilli sauce or similar. Job done. One pot, minimal prep and washing up. Sorted.

I make couscous which takes 5 minutes. Add quickly sauteed onions and peppers, corn, beans, taco spice to couscous. Use for burritos, tacos or tostados. Lasts for several days in frig. Healthy, low cost meat substitute. My favorite beans are the SW spicy brand.

Cumin crusted pork loin. So impressive, and so easy. Coat a pork loin in cumin, a sprinkle of garlic powder, salt, and pepper, and bake @ 400° until it smells done. Baked potatoes or rice (I use brown and cook with three parts chicken stock to one part orange juice) and roasted vegetable of choice.

And the leftovers are great to make cubanos with, too.

Taco salad is also popular with the kid, so it shows up pretty regularly.

i like pretty much anything in the crock pot because 1 it always tastes so much better 2 meat is always tender 3 not much fuss, just throw it all in in the morning and come home 2 a decent meal. my favorite crock pot meal (even tho its not strictly crock pot) is chicken caccatori. also for simple easy comfort food, i go with potatoes and gravy served with your choice of veggie, and we usually do it with pork chops or chicken, i used 2 always fry the meat but ive been trying healthier options sometimes and baked chicken isnt bad plus its easier since you don't have 2 keep checking and flipping it like you do on the stove. something a bit fun and easy if you have kiddos who want 2 help in the kitchen is english muffin pizzas. you just cut the muffin in half, put your favorite sauce on, i prefer marinara but do what you like. we use those slices of salami from the deli, they are just the right size, whatever kind of cheese you want, or my eldest doesnt like melted cheese, so whatever, olives, peppers, whatever sounds good or you have around the kitchen. just make it fun, only takes about 6 to 8 minutes in the oven. keeps the kids happy and busy, helps with the work load, teaches them a life skill, and bonus! my eldest son is super picky, this way can help get picky eaters 2 eat with less of a battle...sorry that was more than 2, but those are my favorites

I like to mix it up a lot but because of pure laziness (more often than I'd like) I always have Boca Spicy Chik'n patties and anything by Gardein on hand

@JaciBea I don't judge🙂 it was making me sick, debilitating migraines, stopped the fast food, 5 years later went vegetarian and vegan 6 months ago... I’m much better... I’m not a militant vegan🙂

@JaciBea I never expected I could either, I was a bacon eating no way in hell and if I have to give up pizza fuck off, guy... but pain is a great motivator plus Guinness and Oreos are vegan, lol. ... until I was ready in my own time and way it wasn’t possible, it’s your path, do you, whatever anyone’s opinion🙂

Salmon bake and bacon and egg pie.

Cut broccolli, cauliflower, and add whole mushrooms. Toss with a little olive oil, spice however you like. Do this earlier in the day so the spices and oil can infuse with the veggies. Line a couple of baking sheets with foil. Bake at 425 for 25 min. Yummy! Also, if anyone tries this, you may want to turn on exhaust fan.
