I have a cabbage question. I'm up to my eyeballs in cabbage and want to make kimchee. Anyone tried it in Mason jars?

I have a similar problem with squirrels. I put up a 4 foot high 1-inch mesh chicken wire fence around my cabbages, cauliflower, and broccoli. It stopped them.

I make a fermented vegetables using partly cabbage about 3 qts at a time, but I do keep it in mason jars in the fridge because I live in a very hot place.

You mean for storing. Yes, we have and it does work but it needs to be kept cool and I don't think it will last a long time. If you pickle it, it will last.
