@GuyKeith True. Most of what you would get in a Chinese restaurant would be an American invention. Moo Shu pork is Chinese, I'm pretty sure. As are lettuce wraps. That's a good recipe to try as there is not a huge amount of ingredients or slicing/prep that many of these recipes involve.

I love cooking and having control over what's in my food. I only use canned beans. No other canned vegetables. Pretty much everything else is frozen or fresh. Of course, I prefer fresh. I will eat canned tuna and, maybe once every three or four years, a can of Spam (wonderful Spam).

The canned beans often have lots of sodium as well. Read the label. I also generally use the dried beans. But I use canned black beans for the most part because it is just easier. And I am a huge fan of seasoned black beans. Learned the first time and young to throw out the first water you soak kidney beans in. That was a terrible gut hurt. I forget what the exact toxin is but throw away that first soaking water. Yikes.

@freeofgod I'm good now. But when my children were little i sometimes picked up aluminum cans from the side of the road for the ability to cash it in. And they always had fresh fruits and vegetables. Fresh. It was a priority. I did not serve my children sodium drenched crap in a can. And a bag of Lays is roughly 4-5 dollars. About the same as a bag of apples. It's a choice.

@synergy To store large batches you could freeze in ice cube trays which would probably be about what you would want in a recipe. Once frozen, dump into a freezer bag or other container. You could also can and store the same way you would a jam/jelly I guess. Though I'd have to look into ha to be sure. I've seen short small canning jars that are I think 4 oz. Also about perfect for large batch and storing or gifting.
