What is the quickest easiest meal that you make yourself and love?

Zero prep. Simply have some decent wine, cheese, fruit, and crackers ready (this doesn't mean that your friends have to be white). As a possible bonus you can finally use the dorky little cutting board that came with the big badass one from Costco.

I mostly make easy fast things for myself. One of my fav breakfasts (which is generally the fastest easiest meal of the day) is avocado toast, or avocado bagel. Super easy - just toast your choice of bread (seeded whole grain is especially good) and slice an avocado half over the toast and smash a bit with a spoon or knife. A pinch of sea salt and cracked pepper. Exquisite.

It's not really "quick" because I make it in the slow-cooker, but the prep is really quick - I absolutely love my crockpot chili. Toss everything in the crockpot, ignore it for nine hours, and presto!

Scramble an egg, add crumbled bacon, shredded sharp cheddar cheese, and a dash or two of Crystal Hot Sauce. Stir it. Put in a microwaveable bowl, cover, and cook for about two minutes (sometimes you need 15 seconds more) on High in the microwave. It is a mini-omelette. Wonderful, if you have leftover biscuits that you can put the egg into. Toast works too. It's a hot and fast breakfast you can make for your kids or yourself.

I use microwavable rice and vegetables, when it's done I pour in a container of veggie broth and voila I have soup for 4 meals. If I have any left over baked chicken or shrimp I throw that in too

Well my quick choice has always been milk and cookies...yup, that's not going to take me too far. See why I like your cooking options? ?

Banana and blueberry smoothie for breakfast.

Frozen strawberries, blueberries, Greek yougurt, milk. Smoothies are great.

Um, ok, a little embarrassed here. When I've got nothing in the house and am too lazy to go out and get something, my fall-back meal is to microwave a can of Dennison's Chile Con Carne. I add a healthy (or unhealthy, depending on your viewpoint) of cheddar cheese, and then eat it with Cheez-Its (my love of Cheez-Its is no secret to this community. LOL!).

What is cheez-its ? I usually use a knife and fork ?

@IAMGROOT Ha banana's... surrrrre. I have to confess I am posting in ignorance of Cheez Its. I just figured that if you were combining them with Dennison's Chile con Carne they would also be foodless!!!! Very elite of me...I know. Can you shed some light on the cheez -its thing?

@patchoullijulie LOL! I make no claims regarding the nutritional value of Cheez-Its. From experience, I can state, with certainty, that they are the perfect compliment to the aforementioned chili (or any chili), soup, chowder, or any other dish you think needs a little crunch and some cheddary flavor. =] I think it's a ME thing.

@IAMGROOT Cool. A me thing is perfectly acceptable right? Cheese and Chili...what's not to like about that? 😀

Chinese cabbage chicken salad.

Couscous with real butter, parsley, s/p(fresh ground), topped with Parmesan. Yummy, filling, and FAST.

Boil a hot dog, put it in a bun with some onions and mustard. Eat with a dill pickle and some wine. 🤓

I had this last night. Sauted shitake mushrooms and baby bok choy over healthy ramen noodles (just the noodles. I drink the broth) sprinkled with green onions and a side of seared sashimi Tuna. Delicious even if I do say so myself.

Fried rice. Except now I use riced cauliflower (frozen), and use frozen shrimp and frozen veggies. Everything is microwaved, then thrown in the pan or wok. Scramble an egg in it, throw in your tamari. YUM.

Fried lice ? Thats a new one ? Must also be chinese ?

Pepperoni slices with avacado and cheese

Not so much on the pepperoni. I could do the avocado and cheese though. Sometimes I just have veggie chips (instead of tortilla chips) and guacamole. delish.

Clams in white sauce or chicken Alfredo. Make some pasta, then Alfredo sauce is just butter, heavy cream and Parmesan. (Start it with a butter/flour roux if you don’t want the fat to separate in the sauce for leftovers. Quality of the parmesean is crucial. You want the good stuff grated into thin chips n flakes. Not shredded or god forbid powder). For the clam sauce simmer some butter, olive oil n garlic in a pan, add the drained juice from a can of clams to simmer for a couple mins. Add the actual clam meat towards the end

That sounds like heaven! But that's a quick meal?

@patchoullijulie @ellatynemouth yeah that’s among the quickest/easiest that I both make myself and love lol. If you took either of the last two conditions out there would be some quicker alternatives but if it’s worth doing, it’s worth over-doing. Maybe 5 or 10 mins of prep/boiling water then the actual cooking takes 9-11 more minutes. Sauce can be made in the time it takes to cook pasta. 30 minutes tops if you make chicken or shrimp with the Alfredo 🙂 if I’ve got less than an hour to eat I’m gettin takeout.

@Wurlitzer You obviously have the routine down by now. It sounds wonderful and I agree on the less than an hour option. 😀

I crush Ramen Noodles and make them with just enough water, adding other things to make them over 15 different ways. It's a quick snack or can be added to other foods. For example, mixed with chili it becomes a version of chili mac.

I make shrimp flavored Ramen Noodles and add a can of tuna. It’s pretty good.

Microwaved sweet potato, drizzle of olive oil or unsalted butter, curry powder, mix in! No salt, yet yummy!

Omelet, folded. Can chop up pretty much anything to add to it and any type of cheese.

Tostadas (Mexican food)-refried beans, avocado, cheese, lettuce, tomatoes, sour cream, and Valentina hot sauce. ?

Love avocados and Valentina's! I cut avos in half, pour some hot sauce in the hole where the pit was, and just eat the avocado straight from the shell with a spoon.

I sometimes make a really simple dish of my own design that I find quite tasty and nutritious:

  • cooked brown rice
  • cooked lentils
  • raw, diced onion
  • raw, diced tomato
  • raw, diced green pepper
  • raw, diced jalapeño pepper
  • finely chopped cilantro
  • pressed garlic
  • mashed avocado
  • hotsauce and spices as desired
  • fresh-squeezed lemon juice
  • any other vegetables you care to add

Prepare the vegetables while the rice and lentils are cooking, combining the raw ingredients in a large bowl and mixing well. Then add in the hot rice and lentils with the uncooked vegetables, making it a delicious hot dish.

LOL! I'd hate to see your "complicated" meals.

@birdingnut Haha! Well, this has a lot of ingredients, I'll grant that, but it's easy to make: cut up veggies, mix all together with hot rice and lentils, and serve. It's pretty much idiot-proof (so I really can't screw it up). ?
